A couple people have reported being “Overwhelmed” by the CSA Box.
Here are A Few tips on what to expect and how to make the most out of your box.

I prefer not to overwhelm you. So since you asked nicely I will try to create a “Meal Plan” using some items in the box. FYI I am not a meal planner, professional chef, writer, blogger, English major etc… (You will not hurt my feelings if you use my emails for your English students to correct my grammatical errors LOL)

I was enjoying the cooler weather on Sat evening (watching the LSU game of course) and decided that Gumbo would be on the menu for this week. But that is the problem with meal planning the weather changes and out the door goes the gumbo haha.
Gumbo is a South Louisiana Favorite and I have the Okra for it. It is a special dish to cook because my beloved Grandmother taught me how to make a roux. The most important part of the gumbo. That is one smell that will always bring back memories of her and the kitchen. Can’t wait to pass on the tradition and teach my little girl how to make a roux and then I won’t have to stir the pot for 45 mins. If you are gluten free I think there are a few gf rouxs out there also.

A easy idea for the working moms/ dads with soccer practice, boy scouts, dance, gym…
Crock pot Roast and potatoes. (I always add onions, bell peppers, Tomatoes also, why not throw In some okra too?)

Summer Squash (zucchini), Lasagna I use Summer Squash or Zucchini for Lasagna often. I also use the tomatoes cooked down to make my sauce for lasagna and spaghetti sauce. The link above says it is labor intensive but it really is not that bad. It takes a little bit of time (the Longer it cooks the Better It taste in my opinion) but if you don’t have ample time it is ok to cook it for as long as you have. Sometime if the tomatoes are going bad I will cut them up and throw them in the crock pot to cook all day. Roasting the is also an option.

You could always stuff the bell peppers with the Eggplant Dirty rice for another meal using the left overs 

The Apples Derek got from a Fellow Farmer in North Eastern Louisiana. He had extra to sell so Derek thought they would be a nice addition to the Box this week. We may have them for another week depending on how many more the farmer has. As mentioned on the website, we are limited in the fruit department but Derek does his best to find other farmers who have the same practices as we do to buy fruit from until our trees start producing.

The honey is from Our Bees. We have bees at our house, Farm, and behind Derek’s Dads house in Pride.
Honey has many health benefits. Maycee loves her honey (I have to hide it in the cabinet because she will eat it by the spoonful) Each harvest brings a different taste as the bees feed on different plant/flowers to make the honey. Here are a few benefits of local honey.

The honey harvesting process is quite intriguing. However I always stay inside. One day I will video the process because a bee or 10 always ends up in Derek Bee Keeper Suit and he is slinging the hat, gloves, and suit off running around like a Crazy man. It is very entertaining.
