Life Changing Recipe
So Life Changing Sounds a bit dramatic…. But life changing it has been.
Last Year when I had an actual Job ( according to my 7 year old I don’t Work and My 3 year told her teacher my job was drop offs ) One of my Home Health Patients gave me an index card that would forever change my life. On the card was a recipes. My patient was about 85 and we often spent most of our Physical Therapy Session talking ( while doing exercises of course) He would give me garden advice (Little did he know that I kill the house plants and don’t have the green thumb of the family). He also shared cooking tips. So neither of us really know how to write a recipe. It is kinda one of those eye ball it things, add it until it looks right. But We have tried our very best to put it into writing so yall can enjoy it too. If you like Crab Cake you will like this Recipe…..

SQUASH CAKES
4-7 Yellow Squash ( you can use zucchini/ or eggplant Just remember they tend to “hold” more Water)
1 egg or egg substitute
Bread Crumbs or Flour or Vidalia onion mix ( my Patient used the onion mix)
1 onion and 1 Bell pepper (Shouldn’t be a problem I think you got a few in your box this season)
Season to taste
Many other recipes on the internet call for you to shred the squash but I slice them and cook them down with onion, bell pepper, and olive oil ( I love the garlic olive oil From Red Stick Spice Co) After it is well done, I put this mixture in a bowl, once it is cooled I add the egg mix, then I add the bread crumbs/ flour/ or Vidalia Onion Mix ( onion mix Makes it crunchier to taste) I use about ½-1 cup of the mix * Just eye ball it Next Shape the cakes into patties . Now you can Bake them on (greased pan or parchment paper) 350 for about 20-30 mins turning them once while cooking. OR you can skillet Fry them in hot oil for about 3-4 mins per side.
Every time I make this Derek and the kids insist that I put crab meat in them too.
You can dip them in cocktail sauce or the dip of your choice.
